Porcini Lemon Zest Pasta

Ingredients

  • 1 lb of fresh spelt pasta (or dry spelt pasta)
  • 1/2 lb of porcini mushrooms (or shitake)
  • 1 onion
  • 5 cloves of chopped garlic
  • 5 tablespoons of extra virgin olive oil
  • Fresh lemon zest from 1 lemon
  • 1/2 teaspoon of ground black pepper
  • ½ teaspoon of salt
  • ¼ cup of freshly grinded parmesan cheese
  • 1/4 of a bunch of fresh chopped dill
  • 1 teaspoon of sour cream per serving (optional)

Directions

  1. Bring medium pot to boil and prepare pasta according to instructions.
  2. Add the olive oil, garlic, and onion to a deep skillet and cook over medium heat until tender. Add salt and pepper.
  3. Add mushrooms and sauté for another 15 minutes until mushrooms are soft.
  4. Place pasta in a bowl and put the sautéed mushrooms on top. Add a teaspoon of lemon zest and a teaspoon of chopped dill.
  5. (Optional) Add a teaspoon of sour cream for richer flavor.
  6. Add more salt, pepper, or olive oil to taste.
