
Porcini Lemon Zest Pasta
Ingredients
- 1 lb of fresh spelt pasta (or dry spelt pasta)
- 1/2 lb of porcini mushrooms (or shitake)
- 1 onion
- 5 cloves of chopped garlic
- 5 tablespoons of extra virgin olive oil
- Fresh lemon zest from 1 lemon
- 1/2 teaspoon of ground black pepper
- ½ teaspoon of salt
- ¼ cup of freshly grinded parmesan cheese
- 1/4 of a bunch of fresh chopped dill
- 1 teaspoon of sour cream per serving (optional)
Directions
- Bring medium pot to boil and prepare pasta according to instructions.
- Add the olive oil, garlic, and onion to a deep skillet and cook over medium heat until tender. Add salt and pepper.
- Add mushrooms and sauté for another 15 minutes until mushrooms are soft.
- Place pasta in a bowl and put the sautéed mushrooms on top. Add a teaspoon of lemon zest and a teaspoon of chopped dill.
- (Optional) Add a teaspoon of sour cream for richer flavor.
- Add more salt, pepper, or olive oil to taste.
