
Arugula Salad with Tahini dressing
DRESSING
Ingredients
- 1 Myer lemon
- 1 table spoon of tahini
- 1 clove of garlic
- 1 teaspoon of grated ginger
- ½ teaspoon of salt
- ¼ teaspoon of black pepper
- 7 tablespoons of flax seed oil
- 1 teaspoon of raw apple cider vinegar
- 1 teaspoon of honey.
Directions
- Squeeze lemon, remove pulp as desired.
- Mince or crush garlic.
- Mix all ingredients thoroughly.
SALAD
Ingredients
- 2 red beets
- 2 golden beets
- arugula
- goat cheese
Directions
- Roast 2 red beets and 2 golden beets in the oven at 350 degrees for about 1 to 1.5 hours or until tender. Remove the beets from the oven and let them cool.
- Put arugula salad on the serving platter.
- Cut beets into thin slices and arrange around the salad.
- Drizzle salad dressing on top of arugula.
- Add a scoop of goat cheese to the center of the salad.
