Arugula Salad with Tahini dressing

DRESSING

Ingredients

  • 1 Myer lemon
  • 1 table spoon of tahini
  • 1 clove of garlic
  • 1 teaspoon of grated ginger
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 7 tablespoons of flax seed oil
  • 1 teaspoon of raw apple cider vinegar
  • 1 teaspoon of honey.

Directions

  1. Squeeze lemon, remove pulp as desired.
  2. Mince or crush garlic.
  3. Mix all ingredients thoroughly.

SALAD

Ingredients

  • 2 red beets
  • 2 golden beets
  • arugula
  • goat cheese

Directions

  1. Roast 2 red beets and 2 golden beets in the oven at 350 degrees for about 1 to 1.5 hours or until tender. Remove the beets from the oven and let them cool.
  2. Put arugula salad on the serving platter.
  3. Cut beets into thin slices and arrange around the salad.
  4. Drizzle salad dressing on top of arugula.
  5. Add a scoop of goat cheese to the center of the salad.
